Mini Egg and Spinach Quiches

So I bought this mini muffin tin from Bed, Bath & Beyond and was trying to think of what I could use it for. The mini donuts post I did was a big hit, but what would be a healthier breakfast item? I stumbled upon this post from TwoPeasAndTheirPod and thought it was perfect - mini egg quiches! It's so versatile because you can add/remove whatever ingredients you like.

To start things off, gather your ingredients. I used:


4 egg whites (instead of 5)
2 whole eggs
1/4 cup of milk (I used 2% but skim works too)
1/4 cup of chopped spinach
1/4 cup of shredded cheese (Cheddar, Mexican blend, you name it!)
Salt and pepper
2 red potatoes (I added this instead of adding a meat, like sausage or bacon)

Note that this will be enough to make 12 mini quiches or 6 regular muffin tin quiches.


Start by preheating your oven to 350 and whisk together your egg whites, eggs, milk, salt, and pepper.


Chop up your spinach and add it to your egg mixture, then pour into your mini muffin tin (I found it worked best to use the 1/4 cup or a spoon to pour into the tin). Try not to have them filled to the top, since you're going to be adding more ingredients and you don't want them to spill over!


Next, sprinkle cheese on top. The more cheese, the better I say!


Feel free to add chopped up pieces of potatoes, sausage, peppers, onions, whatever your heart desires! Be careful, though, not to let it spill over.


Stick in the oven for 20 minutes and very carefully remove them from the tin using a knife or fork (so you don't burn yourself). My husband and I decided to eat these for dinner one night and we were full, so 12 mini quiches can definitely fill up 2 people!

Add some hot sauce, ranch, or ketchup or put them in a plastic bag and stick them in the freezer for later so you can pop in the microwave for an easy breakfast anytime!



TOTAL COSTS: $10 (+ 2lbs. of potatoes - optional)
$2.79 for eggs
$2.29 for milk
$1.99 for spinach
$2.99 for shredded cheese
$4.49 for 2 lbs. of red potatoes (and I only used 2 potatoes)

TOTAL AMOUNT OF TIME: 35 minutes
15 minutes of prep
20 minutes of baking

EASY-PEASY SCALE (1 super easy - 5 very difficult): 1 out of 5
This is something I could easily make again and save for later - they're not messy to eat, a great source of healthy vegetables and protein, and are quick and easy to make!

How to Shuck Silk/Hair from Corn on the Cob

It's that time of the year - time to bust out the grill, put on some meat, and eat some corn on the cob! My least favorite part? Shucking the corn. My hands get covered in the hair, I can't remove it all, and I end up getting some in my teeth. When I saw this video on Wimp, I knew I had to give it a shot and I'm so glad I did because I'm not shucking corn any other way! Seriously, they need to teach you this in elementary school. It's important stuff to know.

Take your ear of corn with the silk and husk still on...


...and place it in the microwave. One corn on the cob = 4 minutes. So if you want to do two at a time, put it in for 8 minutes.


When the time is up, remove it from the microwave and cut off the end. Note that it will be EXTREMELY hot when you remove it from the microwave so wear gloves and be very careful!


This is what it should look after you lob off the end. Note that I'm wearing oven mitts. I'm not kidding, man, it gets hot!


Grab the corn by the top and squeeze. The corn will come out of the end without any silk on it!


And there you have it kids! I recommend waiting a few minutes for it to cool before diving in but you don't have to grill it, put it in a pot of water, or do anything else because it's ready it eat!

1 minute to cut off end and squeeze through husk

It's very easy, you just need to be careful not to burn your hands (or tongue) as it does get extremely hot!

Microwave Meals in a Mug -- from Scratch!

NPR came out with a great blog about meals you can make in your microwave from scratch, which is perfect if you work in an office, live in a dorm, or simply don't feel like paying for gas in your apartment (and therefore can't use a stove). I decided to try out three different meals to see if they were any good.

Breakfast - Scrambled Eggs

I followed this recipe from Mr. Food and here's what I concluded:

PROS: This would be a good meal to make in the morning if you work in an office or a dorm. Very easy clean-up and very quick to make.

CONS: 2 eggs might not be filling enough for some and it was pretty bland. I recommend putting in the salt before you microwave instead of after. Might want to add other seasonings too (oregano, maybe some salsa, etc.)

RECOMMEND?: Yep, I'd recommend this. Super easy to make and a good source of protein!

Lunch - Mac and Cheese

I followed NPR's blog and here's what I found:

PROS: This will be better for you than any Kraft or Velvetta Mac n' Cheese mix you might make for a meal. It tastes good and again, is very easy to make.

CONS: Water does spill all over the microwave when you're first heating the pasta, so be sure to have a couple paper towels underneath. It's also a bit bland so be sure to add some seasonings. Also, 1/4C is not enough cheese so try 1/2C. Finally, this is very hot so be very careful!

RECOMMEND?: I've had better mac and cheese but for 7 minutes (4 minutes boiling the water and 3 minutes for cheese to melt and sauce to form) and a microwave, it's not bad!


Dinner: Brownies (No, not dessert. Dinner.)

Again, I followed NPR's blog for the recipe and here's what I found. Note that I did not include instant espresso, dried cherries, or almonds (I wanted to stick with the ingredients I already had at home).

PROS: Very chocolate-y. If you like brownies but don't want to be overpowered by chocolate, leave out the chocolate chips on top.

CONS: This isn't necessarily a bad thing, but it had more of the consistency of chocolate cake than a brownie.

RECOMMEND?: Abso-freakin'-lutely. All you need is a glass of milk or put some ice cream on top and you're in business!

TOTAL COSTS: Free!
But that's only because I had all these ingredients already at home

TOTAL AMOUNT OF TIME: 1 minute, 15 seconds for the eggs, 7 minutes for mac & cheese, and 1 minute, 30 seconds for the brownie
